She loves to paint!

I know there are a lots of creative projects for kids floating around on Pinterest but I just don’t seem to make them into reality. I’m great around the holidays, but otherwise I feel less inspired. I recently won a Kiwi Crate from a Twitter party.  It was love at first sight.

There are two projects in each box.  The boxes are made from recyclable cardboard and there’s no excess packaging, which I always appreciate. We got “Busy with Bugs”, which consisted of a firefly project, a sponge painting project and activity learning cards. Click here to see more of their sample crates. 

The instructions give parents an idea of how difficult a project is, and also the messiness factor. Older kids can read the simple instructions themselves. The boxes are targeted towards a 3-7 year old kids.  

This one was rated high on the messiness level!

I used our Kiwi Crate as a quiet time activity while my little guy is taking a nap. I feel good because I did something creative with my daughter, and she feels good because she got some quality mommy and me time.

Kiwi Crates come in either a monthly or yearly subscription form, plus gift options. It’s about $20 a month. They also have a cool feature to increase the amount of supplies so siblings can share.  If you are looking to give grandparents an idea for birthday or holiday gifts, this is an excellent option. For our family, I like the subscription idea so I always have something fresh and new keep us entertained without adding more toys and clutter to the house.  And I don’t have to go to the craft store…and spend $50 without even trying. This is such a better option for busy parents who want to do creative projects with their kids, but don’t have the time to get all the materials together. Oh, and shipping is free!

I have to mention the firefly project became a family favorite. One night before bedtime, we all played with the firefly on it’s zip line in the dark. There were lots of squeals of delight from both kids. What could be better than a project that includes glow sticks?!

Oh, my. September.  My favorite month of the year.  While I love the beach and summertime, there is something special about September.  Leaves changing colors, apple picking, and finally I can wear my favorite boots again.  Yes, fall is coming.

This week’s meal plan is a little transition into cozy dinners as cooler temps start to arrive.  Soups are back, pastas are on the menu and I still need to work in some of our garden harvest.  

Monday~ tonight we had the best corn all season. Amazing!
Tuesday~ White Bean, Sausage and Spinach soup
Wednesday~ Spaghetti and meatballs (Madison’s request), sautéed green beans on the side.
Thursday~ Homemade chicken nuggets and sweet potato fries.  I’m going to make a bigger batch of this family favorite and freeze some.  I’ve never tried it before and I’m curious to see how well they hold up in the freezer for a week (or two!).
Friday~ Pizza night. Going to try and make a pesto pizza with chicken and fresh tomatoes.
Saturday~ Date night for my husband’s birthday!! Send him some birthday wishes 🙂 He is my favorite person to cook for.

I am always looking for new ideas for healthy snacks.  There are just some days when we all need something to bridge the afternoon gap from lunch to dinner.  In our house, we often do a late dinner so we can sit down as a family. I need to give my kids something substantial on these days, but I don’t want it to be processed. As kids get older, I see the need for easy options in between sports practices and homework sessions.

I met Amie Valpone during my trip to New York last month.  She writes the blog The Healthy Apple and is a Manhattan based culinary nutritionist, personal chef and food writer.  Amie shares her struggle and triumph in going gluten free.  So many of us have family and friends dealing with food allergy issues. Amie’s story sounds like so many of my friends and I love her positive attitude towards dealing with this challenge.

I’m happy to share Amie’s list of Healthy Snacks to get you through the mid-afternoon snack slump! Baked Pear is first on my list to try.

  • Hard boiled eggs with Hummus (Remove yolk)
  • 1 piece of  whole grain or gluten-free toast with melted SoyaKaas cheese and a slice of tomato
  • 1 sliced fresh pear with a slice of SoyaKaas Mozzarella Cheese
  • 1 piece of good quality dark chocolate with a few nuts
  • Dried pineapple and dried papaya dipped into Greek yogurt
  • 1/2 avocado (pitted) filled with salmon salad (canned salmon + Greek yogurt)
  • 3/4 cup red grapes with 2 crackers and hummus
  • Sprouted English muffin toasted and topped with apple butter and sesame seeds
  • Organic apple sauce mixed with Greek yogurt and peanuts
  • Bowl of puffed kamut with honey and pistachios
  • 2 Spelt rice cakes spread with mashed avocado and organic peanut butter
  • Ground flax seeds and chia seeds added to a banana and mango smoothie
  • Pineapple chunks drizzled with with lime juice, fresh mint leaves and warm almond butter
  • 1/2 cup chickpeas with tomato sauce and Galaxy Vegan Parmesan Cheese
  • 1/2 cup steel cut oats with spinach, rice milk and 1 egg
  • 1/2 hemp bagel toasted and drizzled with olive oil and balsamic vinegar
  • 2 Wasa crackers topped with grated carrots (use blender/food processor) and pine nuts
  • 1/2 cup gluten-free pasta (cooked al dente) with Greek yogurt, low-sodium tamari sauce and sesame seeds
  • 1/2 cup brown rice with snow peas, dried cranberries, rice vinegar and avocado
  • Steamed broccoli and carrots drizzled with honey, stevia and chili powder
  • Asparagus sp
    ears topped with slices of SoyaKaas Gluten Free/Dairy Free cheese (bake in toaster oven until cheese is melted)
  • Fresh grapefruit, sliced in half drizzled with agave nectar and crushed almonds
  • Zucchini and squash, thinly sliced, spritzed with sesame oil and sesame seeds and baked for 20 minutes in oven
  • Make your own frozen yogurt–(Rice, Almond, Hemp, Soy, etc. milk mixed in a blender with ice cubes, banana, raspberries and strawberries.  Pour into cups and freeze until desired consistency.
  • Sardine Salad (1 can sardines mixed with with 2 chopped celery stalks, Nu-Salt and pepper and Greek yogurt) and wrapped in kale leaves
  • Collard Green Wrap (Spread hummus and salsa with crushed peanuts atop large collard green leaves; wrap up like a burrito
  • Jicama and carrot stalks dipped into macadamia nut butter
  • Star Fruit and red cabbage mixed with honey and almonds
  • Sweet Potato Disks (slice 1 sweet potato into disk-like shapes (microwave or toast and sprinkle with paprika, Nu-Salt and pepper and dip into organic ketchup)
  • 1 cup fresh cherries with Greek yogurt
  • Raw red, yellow and orange bell peppers with a hard boiled egg
  • 3 dates and 3 dried figs with 1 Tbsp. nut butter
  • 1 kiwi  with 10 almonds
  • Whole grain crackers with 5 shrimp with Greek yogurt, dill, Nu-Salt and pepper
  • 1/2 cup kidney beans with Greek yogurt and melted SoyaKass Gluten Free/Dairy Free Cheese
  • Baked Apple (bake halved apple for 1 hour at 350 degrees, top with cinnamon and agave nectar)
  • Baked Pear (bake halved pear at 350 degrees for 30 minutes, top with raisins and honey)
  • 1 hard boiled egg with 1 Wasa Cracker and hummus
  • Watermelon sliced/cubed dipped into a mixture of Greek yogurt, balsamic vinegar and lime juice
  • 1/2 cup high fiber cereal with soy milk and a handful of peanuts
  • Tofu Bites (Extra firm tofu, drained and cubed set into the oven for 30 minutes at 350 degrees; dip cooked tofu bites into hummus and sprinkle with Galaxy Parmesan Cheese)
  • Dried Banana Chips with pecans
  • 1/2 cup black beans, salsa, olives and whole wheat crackers

If someone told me I was going to take my three and one year olds to the movies together, I would have thought they were crazy.  No way would they sit still for a movie in a dark theater.  Turns out I can take them to a movie.

Last week, we had the chance to attend a showing of the movie The Oogieloves in The Big Balloon Adventure.  It was 83 minutes long and filled with light, laughter and love.  No scary enemies to explain, no dead parents, and no fast animation.  The movie creators consider this film to be “Rated GGG”.  It is unlike any other children’s movie in the market.  The audience was targeted to ages three to five, not a broad family audience like many “children’s” movies. There is even a parent’s guide to the movie to read ahead of time.

The coolest thing about the movie experience is the interaction.  I know my little ones couldn’t sit down for a long movie.  At Oogieloves, they are not expected to.  There are fun little butterflies that dance across the screen to encourage moviegoers to get up out of their chairs and dance.  My kids were up in the aisles and it was ok.  There was no need to sush them and pull them back into their chairs. Well, at least until the turtles make their appearance on screen.

At a round table discussion with the creator Kenn Viselman, he mentioned the statistic that the average American child is in front of a screen 54 hours a week.  This sedentary activity is part of what’s leading our country’s children down the path of childhood obesity.  Maybe this one movie will make a difference and encourage other producers to get people moving.  As a parent of young children, I hope to see more happy, dancing filled movies available to them.

The movie opens on “Oogust” 29th at your local theater.  On opening day, the little movie goers will get a butterfly wand too!  I may go back just for that since my daughter has been singing the movie songs since the show.

Wow, last week of summer.  I hope you all have some wonderful plans and not quite into the thick of back to school business.  I relooked at my summer bucket list to see if there is anything else I can still check off. There are a couple of food ones that are making an appearance on the menu plan this week.

Grilled Chicken with Whole Wheat Couscous and Peas

Monday~ Grilled lamb.  (yes, making an appearance again because my favorite reader forgot to defrost it last week 😉 We will have leftover grilled chicken too from Sunday in case the kids are not into the lamb.  First time trying it on Monday!  Green peas and whole wheat couscous on the side.

Tuesday~ Hamburgers and homemade hamburger buns! Garden fresh tomatoes on the side.

Wednesday~ Pork sausages slow cooked in pasta sauce. Serve with pasta and garden peppers.

Thursday~ CORN. (Daddy is on his own.)

Friday~ Long weekend! Back to the beach.  Hoping to eat lobsters one more time at my Dad’s house.

I also have some zucchini to whip into this delicious relish recipe, plus some additional cucumbers to pickle. There are also a pile of herbs I’m planning to dehydrate.  I’ve collected some preserve recipes here if you are trying to savor your summer bounty for the long term.

Last thing on the bucket list~homemade ice cream.  This recipe looks easy enough and no special equipment needed.

Are any of you paper lovers?  You get excited by a brand new notebook and fun stationary?  I have always been one of those people.  Maybe it’s partly why I love making lists on fun paper.  Making business cards has been one of those more challenging things.  I order online and don’t get to feel the paper.  I miss the tactile response to picking out just the right paper.

My first set of business cards came out fine.  They were made with recycled paper, which was important for me as a green blogger.  The design wasn’t perfect but they were inexpensive.  Then I got to try out the green cards from Moo.  Pretty cool design options, eco-friendly paper, plus some really cool customizing options.

I decided to do a custom option for my green Moo business cards.  Some bloggers suggested adding a photo to cards in light of the masses headed to BlogHer.  I have to agree that I did like seeing other pictures on cards because I was able to place where I first met someone. 
Since I do love paper, I was also able to test out the Luxe Moo cards.  Not exactly eco-friendly, but beautiful.  Each business card is like handing out a present.  It’s heavy, well designed (Moo design, not my own) and has great color saturation.

Which is my favorite?  I think I would like the design of the Luxe card on my eco-friendly paper cards. The Luxe ones are almost too dense for everyday use, especially for a blogger conference when you are handing out cards like candy. For a paper snob like me, I can vouch for how nice the green card option is.  They are more matte than the standard Moo card so you shouldn’t run into any scanner issues.

I know no one wants to think about cold and flu season, but now is the time to get ahead of the game.  Blackberries are coming into season here in the Northeast.  While they can be a bit strong tasting on their own, they pack a powerful health punch.

Blackberry elixir is used when you first have the signs of a cold.  It has similar health benefits of the elderberry syrup we make in the fall. The berries have high levels of both Vitamin C and E, both immune-boosting antioxidants. My stepmother told me it was used by her family for generations, which inspired me to make my own. I’m a big fan of trying to treat a cold quickly, and without a visit to the doctors office.

Our neighbor has a generous blackberry bush and we made it a family affair to collect some.  Both kids ate some and liked them.  I found them to be a little too strong for my tastes.

I collected about 1 1/2 cups of blackberries to make our first blackberry elixir.  The berries should be rinsed and well drained.  Remove stems and discard any moldy berries.  Add them to a glass jar; I used the pint size.

Cover the berries with brandy

Cover the berries with the brandy.  Secure the top and gently swirl.  Place in a cool, dry spot in your kitchen.  Swirl gently for a few days, then let it ferment for eight weeks.  Mark your jar with the ready date so you know when to strain it. It can sit longer, it will just get stronger.  You can add a tablespoon of sugar to the elixir, however I try to avoid white sugar when possible.  If it’s too tart when you taste it, you can add some simply syrup to the glass.

When you first see the signs of a cold, pour yourself a warm glass just before bed.  Drink it up, get cozy under some warm blankets, and feel better in the morning.  Cheers!

Happy Monday everyone! As I prepare my meal plan for the week, I’m also shopping for my groceries.  In my pajamas. How many of you do your food shopping online?  I tend to do it about once a month when I need to restock some basics, or there are lots of great deals at my local store.  Then I can fill in with quick trips to the farmers market or Trader Joe’s. I showed my grandmother my high tech meal planning/online grocery shopping strategy.  She did me one better and said she did meal planning for her family of ten because they only had one car.  Wow.

Wednesday~ Grilled lamb (loin, I think?) with mushroom and zucchini kebabs.  I got the lamb at the farmers market and I was told it is great on the grill with just a little olive oil, salt and pepper.
Thursday~ Corn chowchow.  Pasta with homemade pesto. {meatless}
Friday~ Pizza night with whatever is growing in the garden.

This past week I’ve been reading the new ebook Easy. Homemade from Mandi Ehman at Life Your Way.  I’m a big fan of making your own pantry staples and this is a really easy reference guide.  Mandi is not a foodie at heart, but she wants to keep the junk out of her family’s diet.  The recipes are easy to understand, generally small batch (like a refrigerator pickle recipe for just one pickle!) and will save you  money in the long run.

This is my first year with a big garden.  Big being multiple raised beds, containers and hanging herbs.  We made the garden a family affair from the beginning and continue to work together to harvest, weed and water all of our growing plots.

The biggest surprise for me is how attached I have become to the garden.  I enjoy taking care of it, and love getting to cook with our fresh veggies.  Madison has on more than one occasion, grabbed a handful of snow peas and run off to eat them.  JJ likes to dig in it.  We are busy trying to keep his busy hands away from the young carrots. It’s part of our routine for the day.

What I noticed lately is the generosity of neighbors when it comes to gardening.  It started with one neighbor arriving with a wagon full of seedlings that he couldn’t fit in his garden. I got peppers, eggplants, and a great assortment of greens.  Now that everything is edible, it’s like hitting the jackpot.  Free veggies!  Delicious, healthy good.  I pay it forward and deliver some of these veggies to the same neighbors, since they had an unfortunate run in with a woodchuck this season. The kids pack the fresh veggies into their wagon and we walk it up the street.

When you have a garden, they last thing you want to do is waste any of the harvest.  It takes a lot of time and effort to get those cucumbers to grow!  When one neighbor went on vacation, she offered up her cucumber patch to me.   Oh, did we have fun.  We picked a few pounds, loaded up the wagon, delivered some to the neighbors, then had a pickling party after the kids went to bed. And yes, the kids couldn’t wait to dig into the cucumbers on their walk home.

Here is my advice. Share your harvest with friends and neighbors.  You never know what treat you may get in return.
