Chocolate Peanut Butter Frozen Yogurt

We are big peanut butter fans in our house. We go through tons of it on sandwiches, on bananas, in smoothies or on apples. I’m also a big fan of chocolate so I decided to combine the two and create a Chocolate Peanut Butter Frozen Yogurt recipe.  I was given some greek yogurt samples from Stonyfield and peanut butter samples from Peanut Butter & Co. Both are yummy on their own, but even better together.

Frozen Yogurt Ingredients

I had my little helper’s with me to make our first frozen yogurt, ever. The ice cream maker had been put away for the winter but now it’s going to stay handy for the warm summer months. The Cuisinart ice cream maker we use is actually 43% off from Amazon right now.

How to Make Frozen Yogurt

When you add the cocoa powder, stir it in gently so it doesn’t blow up in your face.

 

Chocolate Peanut Butter Frozen Yogurt

Easy Chocolate Peanut Butter Frozen Yogurt

Course: Dessert

Ingredients

  • 2 cups Stonyfield Greek Yogurt Plain
  • 1/2 cup Peanut Butter & Co Smooth Operator Peanut Butter
  • 1/2 cup 1% milk
  • 1 can 14 oz sweetened condensed milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup sifted cocoa powder
  • 1/2 cup chocolate chips optional

Instructions

  • Combine all ingredients except chocolate chips into a large bowl using a hand mixer.
  • Add to ice cream maker machine. Churn for 25 minutes.
  • Add chocolate chips and churn for 2 additional minutes or until well blended.
  • Enjoy!

Hello spring! It’s finally warmer and everything outside is growing and turning green. As I planned this week’s menu, I started looking forward to those days when we can pick everything we need to make a salad from our garden. On Sunday I planted two different lettuce varieties, baby spinach, green beans and basil. We use raised beds so I’m hopeful the weather will stay warm enough to let my little seeds thrive.

This week is a little nutty with the semi-annual Parent Talk Used Clothing, Toys and Gear sale happening on Saturday May 4th in Needham. I’ll be helping out Thursday, Friday and Saturday so I’m trying to keep the cooking to a minimum!

Spring is finally in the air and we are spending lots more time outside. As my kids burn more energy now running and biking, making sure they are eating well is even more important. As a Mom, I talk about what my kids are eating, or not eating, with friends and family a lot. I am lucky to have two kids who are not very picky, they just tend to want to eat all the time. I think snack is JJ’s favorite word, right behind show. As a blogger who focuses on kid friendly food recipes, I get to read a lot of cookbooks and nutrition books when they first get released. The recipes that always get the best response are those that are pretty. Pretty to my kids means there are lots of colors on the plate. Eat the Rainbow is such a simple message, but it really drives home what you should be feeding your kids. They may not eat it all, but there have been studies that show the more variety of color that is offered on a plate, the better the overall intake is of food. This is great for parents of picky eaters. Although they may throw it at you, at least you know you are offering them the best chance for a well-balanced meal. If you have young kids, I really like the book, Give Peas a Chance: The Foolproof Guide to Feeding Your Picky Toddler.

Ever since we received a Blendtec blender, smoothies have become a regular part of our day. Sometimes it becomes a meal replacement on busy days, other times it’s the perfect snack in the afternoon to hold us over till dinner. The kids get to pick their color and we go from there.

Last week I attended a “Smoothie Summit” at Whole Foods Fresh Pond in Cambridge. A group of local Boston bloggers got together to share and test out some smoothie recipes. The results were amazing!

A Smoothie Throw-down at Whole Foods

Course: Smoothie

Ingredients

  • 1/2 cup guava juice
  • 1 cup Stonyfield Greek Yogurt
  • 2 bananas
  • 1 navel orange peel and cut into quarters
  • 1 apple cut into quarters but not peeled
  • 2 cups spinach
  • 1 cup frozen mango

Instructions

  • Add everything into a blender in the order above.
  • Blend on smoothie setting until desired consistency.
  • Serve immediately.

Happy Monday! Is it really the end of March? I’m so ready for April and a little spring weather. Hopefully the sun starts to shine and the Easter bunny can make his arrival with no issues next weekend.

I just returned from a fun-filled Blissdom weekend. It was so wonderful to meet new people, listen to some amazing speakers and get some new writing inspiration from my sessions. I was ready to come home today and give my husband and kids a big squeeze.

This week is a bit busier for us with some events and Easter preparations to plan for. Lots of family favorite meals ahead as I try to keep things simple.

Happy St. Patrick’s Day! I hope those of you who celebrate had a wonderful day. We enjoyed a little family reunion away from home and had a great meal of corned beef, cabbage and roasted potatoes. I made mint chocolate chip cookies which came out awesome. The traditional Irish soda bread I made was also delicious, once we found it still at home after our trip!  Time for this week’s meal plan, which will feature another Irish dinner.

Finally, a beautiful Sunday to start the week. I hope that means winter’s grasp on us is loosening a bit. After getting another foot of snow  last week, I’m so ready for spring.

It’s a great way to test drive some new ones to see if they work well with your style of cooking.  I know I have a good one if I add a ton of post it notes while reading, or I try to renew it. My friend Christy has a good rule: If you try to renew it at least three times, then it’s probably worth investing in.

Here is the menu for the week ahead…

Monday Meal Plan March

Sunday~ Turkey Sausage and Spinach Lasagna. This was a hearty Sunday dinner, although not a favorite with the kids. I would make it again and just save some sausage crumbles and raw spinach for the kid’s dinner next time.

Monday~ BBQ Chicken in the slow cooker. Make BBQ sandwiches with corn on the side.

Tuesday~ CORN (Clean Out Refrigerator Night)…Mom’s going out!

Wednesday~ It’s my birthday so I’m going with one of my favorites, Taco night! This will be a make your own creation with some rice and beans on the side. My in-laws arrive for a visit so it will be a festive night. Now…which cake to buy?

Thursday~ Turkey Pesto Meatballs from the Weelicious cookbook. I found some of our homemade basil pesto from the end of the summer tucked away in our deep freezer. I’m happy to use it up in this new recipe. Linguine on the side, plus a salad.

Friday~ Pizza night! I finally found a good pizza dough recipe for the break maker.

Happy March everyone! In like a lion, out like a lamb. It’s snowing (again) and I’m so ready for spring. We started decorating for Easter and I’m looking forward to a fun-filled month with my birthday, a St. Patrick’s day gala event with friends, a trip to Blissdom in Texas, and ending with Easter. At church, it was mentioned that Lent means “springtime.” I’m holding onto this message as we get through the last tough month here in New England.

On to the meal plan. Some new recipes and some favorites. Lots of evening meetings this week so I’m trying to make sure dinner is easy, for whoever is preparing it.

Monday Meal Plan March 4 RandomRecyclingSunday~ Whole Chicken in the Pressure Cooker. It was delicious and my mom said it was the most dinner she has seen my kids eat in a while. The chicken stock is already brewing in the crock pot thanks to my husband’s help deboning the chicken and chopping the veggies up for the broth.

Monday~ Chicken Soup. Best way to use up all the leftovers. Homemade bread in the bread maker will start at nap time.

Tuesday~ Teriyaki Steak Tips, Roasted Asparagus and Potatoes.

Wednesday~ Maple glazed salmon, steamed green beans and rice.

Thursday~ CORN (Clean Out Refrigerator Night)

Friday~ Clams and Spaghetti with Slow Roasted Cherry Tomatoes. New recipe, going to look around this week to see who has little neck clams available.

It’s Sunday and snowing yet again. Is it spring yet? With the chill still in the air, this week’s menu plan features lots of slow cooker recipes, soups and easy dinners. We are trying to incorporate some additional meatless meals and if you have a great recipe, please share.

Meal Plan Board Feb 2012

On the menu this week…

Sunday~ Italian Medallion Chicken with spaghetti and stir fry veggies on the side. This is one of Wildtree Freezer meals.

Monday~ Use the leftover chicken and make a caesar salad. If time allows, I think I’ll make the dressing from scratch using this recipe, except I’ll use anchovy paste instead of fillets.

Tuesday~ Sweet and Sour Meatballs in the slow cooker/Ninja. So nice to cook the meatballs in the Ninja and then dump all the rest in. Served on a skewer the kids should love this new recipe.

Wednesday~ I’m attempting a meatless chili…going to wing it using black and pinto beans, homemade salsa, corn and tomatoes frozen from the summer and some fresh peppers.

Thursday~ CORN {Clean Out Refrigerator Night}

Friday~ Chickpea Stew with Apricots (repeat meatless meal that I loved!) Great option during the Lenten season.

Saturday~ Pizza

Sunday~ Cabbage Rolls in the slow cooker
