Monday may nearly be over but here is this week’s meal plan. I decided to take a holiday with the kids and enjoy some awesome fall weather. These days are numbered so get outside!

Monday Meal Plan Oct 14thMonday~ Zesty Chicken and salad. {Turned into a leftover night as the chicken took twice as long to cook as the directions indicated….lots of chicken salad in our future.}

Tuesday~ Slow cooker chicken chili

Wednesday~ Meatloaf, sweet potatoes. Might do mini meatloaf muffins for the kids. I toss lots of veggies into my meatloaf and the kids don’t notice.

Thursday~ CORN {Clean. Out. Refrigerator. Night}

Friday~ Pizza {Daddy’s in charge!}

Saturday~ Pumpking Carving Party night!

Sunday~ Absolutely Onion Pot Roast (Wildtree Freezer Meal), carrots and egg noodles.

It’s Sunday and snowing yet again. Is it spring yet? With the chill still in the air, this week’s menu plan features lots of slow cooker recipes, soups and easy dinners. We are trying to incorporate some additional meatless meals and if you have a great recipe, please share.

Meal Plan Board Feb 2012

On the menu this week…

Sunday~ Italian Medallion Chicken with spaghetti and stir fry veggies on the side. This is one of Wildtree Freezer meals.

Monday~ Use the leftover chicken and make a caesar salad. If time allows, I think I’ll make the dressing from scratch using this recipe, except I’ll use anchovy paste instead of fillets.

Tuesday~ Sweet and Sour Meatballs in the slow cooker/Ninja. So nice to cook the meatballs in the Ninja and then dump all the rest in. Served on a skewer the kids should love this new recipe.

Wednesday~ I’m attempting a meatless chili…going to wing it using black and pinto beans, homemade salsa, corn and tomatoes frozen from the summer and some fresh peppers.

Thursday~ CORN {Clean Out Refrigerator Night}

Friday~ Chickpea Stew with Apricots (repeat meatless meal that I loved!) Great option during the Lenten season.

Saturday~ Pizza

Sunday~ Cabbage Rolls in the slow cooker

Happy February! I’m relieved this is a quiet week for us. After two birthdays, two cupcake parties at school, one Princess and Pirate party and a Superbowl, we are ready for a little detox. This week we are trying to clear out the freezer meals and start tackling the pantry stockpile. It’s always better to keep your dry goods cycling through and I realized we have a little corner that hasn’t gotten much love lately.

Monday Meal Plan February 4 2012 Random Recycling

Sunday~  Daddy made calzones for the big game. Delicious!

Monday~ Chicken Lime Fajitas. (Wildtree freezer meal) Brown rice on the side made in the pressure cooker.

Tuesday~ Minestrone Soup. Defrost homemade chicken broth the night before.

Wednesday~ Italian marinated flank steak (Wildtree freezer meal). Roasted green beans and leftover brown rice.

Thursday~ C.O.R.N. {Clean Out Refrigerator Night}

Friday~ Pizza night

For lunches, we have some deli meat to use up and black beans and rice.

Our little guy turned two today! He was a happy guy all day, until he had to go to bed and started tugging on his ear. Crossing my fingers it won’t be one of those weeks!

This week’s meal plan was a little more challenging than usual for me. My husband is doing the South Beach diet so it means a little more protein and veggies added to our usual mix. It’s hard to break the mold of protein-veggie-starch that I’ve come accustomed to. And no Friday night pizza! That was the hardest thing to adjust since it was the one day of the week I didn’t have to come up with something.  Thankfully I went to a Wildtree freezer meal workshop and made 10 meals that are now ready to go for the next month. The “Best Burgers” will replace pizza for Friday night this week.

Monday Meal Plan Jan 14

Sunday~ Leftover smoked mozzarella and tomato meatloaf. Another Wildtree dinner and it was yummy.

Monday~ Honey Balsamic Drumsticks. Wildtree again…I’m not typically a fan of cooking drumsticks but I thought the kids might like the novelty of them, and the variety.  Served with steamed broccoli and tangy balsamic couscous (for some of us carb eaters).

Tuesday~ Mexican Black Bean Chili with Sausage. Looks like it’s South Beach approved and delicious.

Wednesday~ C.O.R.N. (Clean out refrigerator night!)

Thursday~ Teriyaki Salmon, steamed green beans and pumpkin mac n cheese.

Friday~ Best Burgers from my Wildtree stash. Serve with whatever veggies are left from the week, either in a stir-fry or salad.

Good news when you want to organize your freezer.  You have to finish this project, and finish fast.  When I started menu planning last week I realized my freezer had gotten a little out of control.  Usually I keep a running of list of what’s inside clipped to the side of the fridge.  I realized that the freezer was full, but not with anything useful to make dinner.  Time to clear it all out and start over. (And why exactly do I have THREE ice creams in there??)

I choose clear Fridge Binz from Bed Bath and Beyond for this project.  You can get them on Amazon for a lot less than I paid…lesson learned. Check online first! I liked the clear option and the durability of the material.  I don’t mind spending a little more money on an organization system if I think I can use it for the next 10 years.

The door now has some workable space.  So excited for the warm weather to break out our Zoku Popsicle maker and use up some of the frozen fruit I found.

The labels were made by the Chalkboard Contact PaperI have used in my other organizing projects last month.  I like the simplicity of the black and white labels so I just keep going with it for now.  I even like how the scallop punch label for the apple sauce came out.  I can reuse the jar, wipe off the label and then fill it with something else.

Anyone else have an organizing project ahead for the weekend? I love to hear what everyone else is working on and get inspired to tackle something else!
