Homemade bread is always a treat, especially on Mother’s Day. This is a delightful recipe that makes two loaves of Blueberry Bread. One for you, and one to give away! Blueberries are available year round fresh or frozen which makes this quick bread recipe even easier. You will not be disappointed with how moist and yummy this turns out. Just imagine getting breakfast in bed, complete with premium butter on the side.

The blueberry muffin bread recipe gives you versatility in the kitchen. You can bake two loaves of bread, 24 blueberry muffins, or a bundt cake. I really like the idea of the two loaves of bread so we can enjoy one as a family on Mother’s Day and give the other one to family. Sweet breakfast bread with premium butter is always a winner.

Did you know there is a difference between store brand butter and premium butter? Often times, store brand butter includes rGBH, a growth hormone. You may have been buying organic milk for awhile, but what about your butter? I made this recipe with Finlandia Butter, a premium butter made from cows that live on farms where they are not treated with rGBH. Whether you are baking and need unsalted butter, or topping off a piece of blueberry bread with salted butter, you can make a healthier choice with Finlandia. (Next on my list to try is bulletproof coffee, has anyone tried it?)

When you mix together the blueberries with the batter, fold them in slowly. If you stir too much, the whole bread will turn purple!

This is a versatile recipe and you can make this as a quick bread, muffin or bundt cake. If you make two, eat one warm from the oven with butter and giveaway the other one. Or, keep it in the freezer for when you have company. Blueberry Bread is great to bring to a Mother’s Day brunch too.

BLUEBERRY BREAD

A delicious moist blueberry muffin bread, perfect for breakfast or an afternoon snack.
Cook Time: 1 hour 10 minutes
Course: Breakfast

Ingredients

  • 1 cup premium butter at room temperature
  • 2 cups sugar
  • ¾ teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 3 eggs
  • ½ cup sour cream
  • ¾ cup milk
  • cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups blueberries fresh or frozen
  • Topping
  • ¼ cup sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • Grease two loaf pans (or muffin tins or bundt pan)
  • Cream together butter and sugar.
  • Add eggs and blend, one at a time.
  • Add lemon extract, vanilla extract, sour cream and milk.
  • In a separate bowl, combine flour, baking powder, baking soda and salt.
  • Slowly add flour mixture to the butter mixture.
  • Fold blueberries into batter gently so the whole thing doesn't turn purple.

WHAT IS YOUR MOTHER’S DAY TRADITION?

What’s your meal planning schedule like? Do you do it a morning for the week ahead? Plan it out for the month? How about breakfast and lunches? There are so many different ways to approach meal planning and there is no right answer. All that matters is you try to carve out some time to get prepared. If you can make the dinner time hour feel less stressful, then you are doing something right. Just think, if you don’t have to run out to the store just before dinner for a missing ingredient, that’s more time you can spend with the kids playing at home. Or pouring a glass of wine to enjoy while you cook dinner. Or both.

TORTILLA SOUP RECIPE

Crock pot Tortilla Soup recipe the whole family will enjoy.
Course: Main Course
Cuisine: Mexican

Ingredients

  • 2 frozen chicken breasts
  • 1 - 28 oz can diced tomatoes
  • 1 - 10 oz can enchilada sauce
  • 1 medium onion chopped
  • 1 - 4 oz can chopped green chile peppers use mild if kids are eating
  • 2 cloves garlic minced
  • 1 - 32 oz container chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 bay leaf
  • 1 - 10 oz package frozen corn
  • 1 can black beans rinsed and drained
  • 1 Tbsp chopped cilantro

Instructions

  • Place everything into a slow-cooker except the cilantro. Stir.
  • Cover and cook on High setting for 5 hours.
  • One half hour before serving remove chicken from soup and shred using two forks. Put chicken back into soup and stir. Let cook for remaining time.
  • Top soup with sour cream, shredded cheese, tortilla chips, avocado slices, chopped cilantro and lime wedges.

Smoothies are still the #1 way to get green veggies into my kids. All three of them slurp them up and come back asking for more. Give them a little cooked spinach on their plate at dinner and you would think I had served them liver. With the kids love for smoothies, I thought I would try kale again to see if could find a recipe that was kid-friendly.

Connor went into the kitchen the other day and pointed at the yogurt and then made a sound like “whirrrr whirrr.” He was talking smoothie. It was adorable and he then went to the cabinet where we store our Blendtec Blender and pointed at it. Clearly he loves an afternoon smoothie too.

The first round we tried did not include the pineapple. While Connor still drank it, I didn’t care for it. I need a little bit more sweetness to cute the strong taste of kale. Round two recipe was a winner! The Coconut and Kale Smoothie was born.

COCONUT KALE SMOOTHIE

A healthy green smoothie that is kid-friendly.

  • 1 cup coconut milk
  • 1 cup Stonyfield Vanilla Yogurt
  • 2 cups kale leaves only, no stems
  • 1 cup frozen pineapple
  • 2 tablespoons shredded unsweetened coconut
  • 1 peeled orange optional to make it even sweeter

Instructions

  • Add all ingredients in the order listed above.
  • Blend until greens are smooth.

IRISH SODA BREAD FOR ST. PATRICK’S DAY

Easy Irish Soda Bread for St. Patrick's Day
Course: Side Dish

Ingredients

  • 3-1/4 cups flour
  • cup plus 1 Tbsp. sugar, divided
  • 1 tsp. Baking Powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ cup 1 stick cold butter
  • 1-1/3 cups buttermilk
  • ½ cup raisins optional

Instructions

  • Preheat oven to 350°F.
  • Whisk flour, ⅓ cup of the sugar, baking powder, baking soda and salt in large bowl.
  • Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Add buttermilk and raising; mix just until moistened.
  • Place dough on floured surface; knead until fully combined.
  • Shape into a loaf in an oval shape.
  • Place on parchment lined baking sheet.
  • Cut deep ½-inch "X" in top of dough.
  • Sprinkle with remaining 1 Tbsp. sugar.
  • Bake 50-60 minutes or until golden brown.
  • Cool completely on wire rack.
  • Enjoy.

  • Waffle pretzels
  • White Chocolate Melting Discs
  • Green Sixlets or Green M&M's

Instructions

  • Preheat oven to 350 degrees.
  • Spread out waffle pretzels in rows on a parchment lined baking sheet.
  • Place one melting chocolate disk on top of each pretzel.
  • Bake in oven for about 1-2 minutes until chocolate is soft. Remove from oven.
  • Quickly place a sixlet (or M&M) into the center of each disk.
  • Let cool at least one hour, or place in refrigerator to cool faster.

It’s easy to make the same smoothie once you find a favorite recipe. I have a go-to green smoothie that the whole family loves, but we are ready to get creative again. So many magazines this month are talking about the health benefits of smoothies I thought it would be fun to highlight a couple of ingredients you may want to add to your smoothies.

We have been using one of the high speed blenders for two years now. It makes a HUGE difference in the quality of your smoothie. On my wish list is the new Vitamix 750 series (sounds like a car doesn’t it?)

Williams-Sonoma carries this blender and seeing that it’s 40% quieter draws me in. I always want a smoothie mid-afternoon…during the kid’s quiet time. Nothing ruins the quiet like a super loud blender. A girl can dream right?

Here are 5 ingredients to try in your next smoothie! Happy blending.

BEETS

If you lean towards mostly fruit smoothies, try to add beets next time around. You can buy them canned (easiest) or you can roast them in the oven in tinfoil to soften them up (not as easy.) Beets are high in vitamins A, B and C; iron, beta-carotene and more. You can even wash up those beet greens and toss them into your smoothie for even more health benefits. Beets can also help reduce inflammation so it’s a great choice post workouts. Add them to a berry based smoothie to start and you may not even notice the taste!

KALE

This leafy green is one of the most searched terms in the month of January as everyone knows it’s good for you. If you haven’t tried it yet, switch your spinach up for kale in a smoothie. It’s high in fiber, Vitamin K (and A and C), iron, antioxidants and is an anti-inflammatory. We tried out kale instead of spinach in some of our favorite green smoothie recipes. The kids still loved them!

GLUTAMINE

This is a powder that can be added to any smoothie. It helps keep your gut healthy which is always a good idea, especially when our system is taxed during the winter season. Make your smoothie first then add the glutamine powder in. Blend on the lowest speed possible so you don’t destroy the health benefits in the delicate powder.

GOJI BERRIES

Some people claim goji berries to be the fountain of youth. What’s not to love about that? Did you  know they have the highest protein content of any fruit? Generally you will find them as dried fruit. Soak them for awhile and then add both the water and rehydrated fruit to your smoothie. Tell the kids it’s a “Wolf” Smoothie since goji berries are also know wolfberries.

Try Matcha in your smoothie

MATCHA TEA

This is one for the adults in house, since this does contain caffeine. (My kids already have enough energy!) Matcha is like green tea, but it’s the actual tea leaves ground up. You get more of the health benefits by drinking matcha tea than just a cup of brewed green tea. Matcha helps detox the body, boosts your energy and may help improve your metabolism.  Add 1 teaspoon to nearly any smoothie to boost the nutritional benefits.

Holiday baking season is in full swing! Cookies, bars, candies and more are hopefully filling your kitchen, and your bellies. I’m off to a Cookie Swap tonight and I’m excited to share the recipe for Chewy Molasses Spice Cookies today. This recipe has been in my holiday rotation for a few years now and the smell of the dough is amazing. It doesn’t require a lot of ingredients and is fairly quick to pull together.

I ran out of ground nutmeg and had some real nutmegs to use. Using freshly ground spices is a sure fire way to create some delicious cookies! You can get whole nutmegs in the Whole Foods bulk section if you want to try just a couple. Use a microplaner to grate the nut.

CHEWY MOLASSES SPICE COOKIE

The perfect holiday cookie
Prep Time: 25 minutes
Total Time: 25 minutes
Course: Dessert, Snack
Cuisine: American

Ingredients

  • 2 cups All purpose flour
  • teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • cup sugar
  • ¾ cups unsalted butter softened 1½ sticks
  • 1 large egg
  • ¼ cup molasses

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt.
  • In an electric mixer, beat butter and 1 cup of sugar until fluffy. Beat in egg one at a time and then molasses until combined. Reduce speed to stir/low and slowly mix in the dry ingredients until a dough forms.
  • Create balls with the dough, about one tablespoon each. (slightly smaller than a ping pong ball)
  • Roll ball in a small bowl of the reserved ¼ cup of sugar.
  • Arrange the balls on baking sheets, 12 per sheet.
  • Bake for 12-14 minutes. Remove from oven and let cool for one minute before transferring to racks to cool. Cool completely and store in an airtight container.

Happy Thanksgiving week to all my American readers! It is one of my favorite holidays, being food-centric and all. Thanksgiving is such a special time to plan for a lovely meal and sit and relax with family. We are hosting for the second time and it’s so fun to map out all the pieces of the puzzle for the week ahead. Today I’ll share my menu for Thanksgiving Day, a couple recipe favorites, plus some tips to make it all come together.

GET YOURSELF A TURKEY

Either a full size bird, or a smaller turkey breast, now is the time to pick it up. We get ours from Owen’s Poultry Farm in Needham. It’s fresh and just delicious! Last year I read a tip to cook a turkey breast in the slow cooker overnight so you have extra white breast meat for dinner and leftovers. It also give you some broth to work with to make gravy ahead of time. Win win.

PLAN YOUR MENU

Trust me when I say write it all down. Then write down what others are bringing. If you have guests, it’s always appropriate to ask them to contribute in some way. It’s a huge undertaking to make a Thanksgiving feast so get some extra hands. Or at least they can bring the wine. The second step is to gather all the recipes and make the master shopping list. I’m having the big grocery load delivered today and then I just have a couple of specific things to grab on Tuesday.

PULL OUT THE PLATTERS

If you have space, gather your serving pieces on Monday. This includes the platters, casserole dishes, serving utensils and make even the fine china you got at your wedding can make an appearance. If there are any holes, get the needed items on Tuesday. My turkey baster broke this past year so I’m grabbing one of those this week.

PLAN THE TABLE

Some people go all out for the Thanksgiving tablescape. In our house, space is at a premium so we need to have breakfast and serve the kids a light lunch at the same table before guests arrive. This year I’m going to layer the table with butcherblock paper and decorate it with some printable menus and name cards from TomKat studio. The kids table will also get a paper cover and they will get some fun activity placemats to keep them occupied too. You can find tons of other ideas on Pinterest–> I’ve been collected recipes and ideas in this Ultimate Thanksgiving Day Board to get you started.

IF YOU CAN DO IT IN ADVANCE, DO IT

It might make Tuesday and Wednesday a bit of a crazy time, but in the end you will be happy to have a bunch of items already crossed off the list. I’ll be making pie dough on Tuesday, Cranberry Sauce on Wednesday, Stuffing Wednesday night, set up bread maker Wed night, and get out all the turkey pans and ingredients needed for Thursday morning. Also, since our kitchen is a little tight, I bring in an extra banquet table to give me a little more working room. It gets repurposed as an appetizer table with fresh linens once guests arrive.

ENJOY THE DAY

Sometimes this can be a hard one when you are in the thick of cooking and organizing. Remember it’s okay if dinner is a little delayed and there are hiccups along the road. Hospitality is not about making it all perfect, but to bring everyone together in a welcoming space. Listen, love and laugh throughout the day and everything will get done. If not, make sure your desserts are awesome and there is plenty of wine to go around.

Kiwi Crate Holiday

As the temperature drops, it seems like my kids want to eat all the time. After packing two snacks and a lunch for my daughter, I’m doing round three of snacks come 4:00. I started playing around with some new recipes using root vegetables in season and came up with a healthy Squash Muffin recipe that is kid-friendly and easy to make.

When the kids saw the butternut squash, I was quickly told they do not eat it. I corrected them and said they don’t like it plain, but we are trying something new. They helped with the prep work and because this is an egg-free recipe, I agreed when they dove in to lick the bowl when we were done. (Although truth be told, I often don’t say no when it’s fabulous cookie/brownie/cake batter either.)

Dreamfarm steamer is easy and convienient in the kitchen

I had picked up squash at my local farmers market, but you can grab it peeled and cut up at the supermarket which makes this come together even faster. Steaming the squash preserves the most nutrients so I used my new Dreamfarm steamer, which the kids thought was very cool and “squishy.” It’s made of silicone and fits in a variety of our pots, which is key for my busy kitchen.

If your kids, like mine, enjoy these mini muffins, I encourage you to try to find other muffins that incorporate veggies instead of always relying on fruits. In October, we also cooked up some Frankenstein-muffins, courtesy of some spinach. It was also a winner!

 

Healthy Squash Muffins

Course: Breakfast, Snack

Ingredients

  • Dry Ingredients
  • 1 cup ground oats blend rolled oats in a blender to make a "flour"
  • 1/3 cup white whole wheat flour
  • 1 tsp of baking powder
  • 1 tsp of cinnamon
  • 1 Tbl sugar
  • Wet Ingredients
  • 6 oz plain whole milk yogurt I recommend Stonyfield Plain or Vanilla
  • ¾ cup steamed Butternut Squash
  • 1 tsp maple syrup
  • 1 tsp vanilla
  • ¼ cup milk

What do pirates and fairies have in common? They are often a part of my kid’s world of imaginative play, complete with pretend swords, fairy wings and silly stories. When I heard about the new Disney DVD coming out called The Pirate Fairy, I was pretty sure my kids would love it. Today I’m sharing this recipe inspired by the movie adorned with Blue Pixie Dust. Did you know fairies can’t fly without Blue Pixie Dust? 

Our own all-natural vegetable colored blue pixie dust is decorating Coconut Vanilla Ice Cream. It’s a diary-free ice cream, which is great for so many people who are lactose-intolerant. It’s great to have a couple of recipe ideas for when you have guests over that dietary restrictions, which is often the case when we have play dates these days. It’s also vegan friendly.

It’s simple with only three ingredients needed. Decorate your own ice cream with some blue pixie dust! Coconut milk is the star ingredient in this recipe. Sometime you can find one that is “low-fat” and I would choose that one as it’s easier to work with. The one here from Walmart worked perfectly as the whole thing was liquid, even though it wasn’t specifically call low-fat. Cane sugar is often sold as Sugar In The Raw. The recipe was developed for use in an ice cream maker. (We use the Breville one.)

Coconut Vanilla Ice Cream

Course: Dessert
Cuisine: American

Ingredients

  • 2 cans coconut milk
  • 1/2 cup cane sugar
  • 1 teaspoon vanilla
  • 1/4 cup coconut flakes optional
  • Instructions

Instructions

  • Combine coconut milk and cane sugar in a medium sauce pan.
  • Cook on medium heat until the sugar has dissolved. Add vanilla and stir to combine.
  • Pour into a heatproof container, like a mason jar, and refrigerate for at least one hour.
  • Add contents to ice cream maker and let it run for about 30-40 minutes, depending on your machine.
  • Add in optional coconut flakes in the last few minutes.
  • Serve immediately or store in an airtight container in freezer.
