I hope this meal plan finds you well, despite the tough week for so many people dealing with storm damage. We are very lucky that our family and friends are safe, although some are still without power. This may be the year we finally buy a generator, just in case.
On the meal plan this week…
Sunday~ Beef Stew in the Ninja Cooking System (High 4 1/2 hours) I use a Martha Stewart recipe and adapt it for the slow cooker. (Don’t miss the secret of the pearl onion!) Egg noodles on the side.
Monday~Crispy Apricot Pork Chops. Family favorite! Garlicky green beans on the side.
Tuesday~Halibut Fish Sticks. Coat fish strips in milk, then panko. Pan fry on medium high heat about 3 mins per side or until fish is flaky. Sweet potato fries baked in the oven.
Wednesday~ Homemade Chicken Nuggets, Peas and some pasta shells.
Thursday~ Grilled Cheese and Slow Cooker Tomato Soup.
Friday~ Pizza night!

I still want to work grilled cheese into my menu. I saw a yummy recipe last week for grilled cheese with avocado and bacon 🙂
