Happy Easter and Passover friends. I hope you enjoyed a lovely time with family and friends. After indulging in some holiday fare, it’s time to dive into this week’s meal plan.

Easy weeknight dinners

On the menu…

Monday: Honey Ginger Slow Cooker Chicken Thighs (recipe), Easy Ranch Roasted Carrots (recipe) and Whole Wheat Couscous

Tuesday: One Pan Mexican Quinoa (recipe). This look awesome and I plan to serve it to the kids in tacos with the usual toppings.

Wednesday: C.O.R.N

Thursday: Burgers on the grill (finally!) and Rainbow Salad. (recipe from Dinner: A Love Story

Friday: Sweet Italian Sausage and Mushroom Pizza

Saturday: Date night!

    I am going to try the Honey Ginger slow cooker recipe tonight- any insight or changes that you would add now that you have made it? I can’t wait- it looks yummy!!!!!

      Hi Deb! The kids LOVED the recipe and all of them asked for more. I only cooked it for 5 hours instead of 6. You can also cut down on the soy sauce a little and add in some water instead. Enjoy!
