An easy weeknight meal in the slow cooker, Curry Chicken Stew is a one-pot-meal with loads of vegetables and flavors.

2cupschicken brothor vegan broth
3-4organic chicken breasts
In a large slow cooker, add the sweet potato, lentils, corn, peas, spices, garlic, and broth. Stir to combine.
Lay the chicken breast on top of the mixture and set to low for 6-8 hours, or on high for 4 hours.
Remove from heat and shred the chicken breast. Add back to the mixture and gently stir to combine.
Enjoy as is, or serve over quinoa or brown rice. Make it vegan and skip the chicken and use vegan broth. (see link below) Add additional root vegetables like carrots, turnips or celeriac root to the stew.
