ZUCCHINI HUMMUS

Ingredients

  • 1 zucchini peeled and roughly chopped
  • ½ avocado
  • ¼ cup tahini
  • 1 lemon juiced
  • 2 tablespoons olive oil
  • ½ " fresh ginger grated
  • 1 small garlic clove
  • ½ teaspoon sea salt
  • pinch cayenne pepper

Instructions

  • Add all ingredients into a food processor. Blend until smooth, scraping down the sides.
  • Store in the refrigerator in a glass container for up to four days.
